It is our pleasure to offer you a Big Spring chicken, lovingly raised right here in Lexington, Virginia. Our chickens are raised without antibiotics or hormones, and are rotated across our pastures for months. This ensures a diverse natural diet that is supplemented by a GMO-free feed ration, that’s also grown and milled right here in Virginia. These birds not only help regenerate the surrounding ecosystem, they also yield a more tender, flavorful, and nutritious meat for you!

Here’s How It Works

Choose a small, medium, or large chicken (sizes range from 3 to 5lbs+).
You will receive an email confirming your order.
Please email farm@bigspringcattle.com to schedule your pick-up. Orders can be picked up Monday and Friday between 3-5 p.m. or by appointment.

Cooking Notes

Our chickens are sold frozen and need to be thawed before cooking.

This chicken was raised on pasture, and will cook faster than a typical grocery store bird. During cooking we recommend using a meat thermometer to gauge when your bird is ready vs a timer. Why? The beautiful bird in front of you has more healthy inter-muscular fat from regular exercise and it’s diverse plant based diet. That fat heats up faster than the protein in the muscles during cooking, requiring less time, and yielding a naturally flavorful and juicy meat.

Heat your oven to 425. A thawed five pound bird should cook in a little over an hour. Your chicken is done when it registers a minimum of 165° in the thigh. Let your chicken rest about 15 minutes before carving.

Big Spring Cattle Company is a sustainable farm located in Lexington, Virginia boasting mountain views and a 10-acre lake formed by one of Virginia’s largest natural springs, our namesake, Big Spring. Located on our family farm in Lexington, Virginia, we raise the highest quality beef, poultry, and pork around. With our backgrounds in agriculture and logistics, we understand how to bring quality products directly to your home.

We raise rotationally grazed beef cows, pasture raised chicken and turkeys, and forest raised pigs. Our mission is to develop a greater connection between food and the people who eat it through education on sustainable farming, hospitality, and good eating.
